Cooking and eating yam (and egg) the same way, over and over again can be extremely tiring. Most people would blame their inability to be creative with yam, on their inaccessibility to creative materials.
Knowing that nothing can be compared to good food, as it bursts so much energy and excitement, Chef Ify (@spiceandaromakitchen) taught us to give fried yam a lift, so it doesn’t look boring.
She gave yam something unusual to brighten it up and make it look attractive. Now, let the yam ‘makeover‘ begin!! To prepare YAMARITA PICADILLO WITH PEPPER SAUCE, you need:
Yam cubes
Eggs
Flour
Vegetable Oil
Onion
Diced Green Pepper
Diced Red Pepper
Chopped Spring Onions
Ginger/Garlic Paste
Curry
Nutmeg
Seasoning Cube
Salt
Blended Pepper
Cucumber (for garnishing)
For the pepper sauce, you need to fry oil, onion, ginger and garlic together, add pepper, seasoning cubes and let it fry for about 10/15 minutes. Thereafter, the colors come in! Add the chopped red and green bell peppers into your sauce and you are done.
The yamarita comes next:
Boil yam with little salt, allow it to cool a bit, chop it into cubes and coat with flour.
Break the fresh eggs, whisk it with onions, green pepper, red pepper, ginger, garlic, nutmeg, curry powder, salt and seasoning cubes.
Soak the flour-coated yam cubes in this egg mixture for a few seconds bring it out and fry in hot oil!
The eggs would help the flour to stick to the yam better and voila!!! Yamarita Picadillo is ready to eat.
Serve with Pepper sauce for a more pleasing satisfaction.
