Àmàlà is a local indigenous Yoruba food, native to the Yoruba ethnic group. It is made out of yam and/or cassava flour, or unripe plantain flour.

Tubers of Yams are peeled, sliced, cleaned, dried and then blended into flour, it is also called èlùbọ́. Yams are white in colour but turn brown when dried.
Egusi  on the other hand, Egusi is a West African name for the seeds of plants like squash, melons, and gourds that, when dried and ground become a staple ingredient in many West African dishes

These seeds are rich in fat and protein, and add these essential nutrients into West African Cuisine.

 It is one of the most popular soups prepared by most tribes in Nigeria with considerable variation and often eaten with dishes like Pounded Yams, Eba, Amala etc.

 

Ingredients

  • Blended onions
  • Pepper
  • Egusi (melon seeds, ground or milled)
  • Palm oil
  • Fresh Une (Iru, locust beans)
  • Salt
  • Ground crayfish
  • Stock
  • Meat
  • Fish (quantity and variety to personal preference)
  • Oziza leaves
  • Pumpkin leaves
  • Smoked/ Dry Fish
  • Cow tripe
