Chef Blossom reveals her special yam porridge recipe and shares tips on how to retain the ‘whiteness’ of your yam.
Though eaten by every tribes in Nigeria, Yam pottage or Yam porridge popularly known as Asaro is common in the Yoruba-speaking parts of Nigeria.
Ingredients
- Yam.
- Red Bell Pepper
- Tomato,
- Yellow Pepper
- Palm oil
- Onions
- Salt
- Chicken seasoning
- Fish
- Crayfish
- Basil/ parsley /scent leaves /spinach, pumpkin leaf (Ugwu).
- Peel off yam skin
- Cut Yam into cubes and wash.
- Add to pot, add water and boil for 10 minutes.
- Add crayfish, salt, seasoning, peppers, curry, thyme, and cook for 15 minutes.
- Add palm oil,
- Add vegetables and cook for 1 minute.
