It was a 3-in-1 kinda breakfast this morning on #WakeUpNigeria, we had boiled plantain with veggie sauce and chapman courtesy of Chef Nathaniel of Natido Cuisine.
Cooked plantains contain vitamins and minerals, a low sugar content and is a rich source of fiber, vitamins A, C, and B-6, and the minerals magnesium and potassium.
Chef Nathaniel made use of these ingredients:
- Gino Max Cubes
- Smoked Fish
- Ponmo
- Crayfish
- Pepper
- Onions
- Tomatoes
- Carrots
- Bell Peppers
- Runner beans
- Spring Onions
- Spinach
- Scent leaf
- Nutmeg
- Rosemary
- Salt
First, he boiled the plantain with the skin in order to retain the nutrients therein.
For the sauce, he fried the onions and tomato in hot oil, followed by the diced bell peppers, and allowed it to cook a bit.
Next, he turned in the crayfish, ponmo and smoked fish. Then the nutmeg, salt and rosemary. The vegetables went in last.
