Uncle Vee prepared ‘Yaji Infused Chicken Curry with Spaghetti‘ in the Wake Up Nigeria kitchen on Boxing day, to help us enjoy the holidays.
He used the following ingredients:
Chicken
Bell Peppers
Pasta
Carrots
Bell Peppers
Corn Flour
Habernero Pepper
Salt
Onion
Yaji
Curry
Thyme
Ginger Powder
Vegetable Oil
Seasoning
Method:
He started by parboiling the pasta (spaghetti) with a little oil in the boiling water so it does not stick.
Marinate your chicken with salt, thyme, lime or lemon.
Next, he heated up a little bit of vegetable oil in a fry pan, added and fried chopped onions, ginger powder and then the already marinated chicken, followed by curry, thyme, salt, ginger powder and then, a mixture of corn flour and little water; and spiced with the Yaji. Note: the Yaji is made up of some ‘aboki spices’ and could also be called ‘suya spice’.
