We went traditional today on #WakeUpNigeria. Chef Yvonne debuted in the kitchen with the exquisite ‘Efo Riro and Eba’. To enjoys this delicious Yoruba delicacy, see recipe below.
Lets get started, shall we?
Heat the palm oil in a pot, throw in the diced tomatoes, tatashe, fresh pepper and stir fry.
Add the onion, garlic and ponmo simultaneously, allow it to simmer.
Put in the dried fish and locust beans. Note that the locust beans is optional depending on your taste.
Add a bit of seasoning cube but don’t add salt to avoid the food being too salty.
Add the already cooked chicken, stir and taste to determine if salt or more seasoning cube should be added, then put salt as appropriate. You can add the chicken stock if necessary.
Allow to simmer until ingredients are properly cooked
Add the vegetable. You can blanch the vegetable depending on the type of vegetable it is and your taste.
To make the Eba just pour boiling water into a bowl, pour garri flakes and stir until it comes together
