Breakfast segment today on #WakeUpNigeria with Chef Demmy was absolutely amazing. We took a trip to South Africa! Wondering how right? Chef Demmy showed us how to make the delectable ‘South African yellow rice and pan fried citrus chicken breast’. See recipe below:
Ingredients used to prepare the yellow rice:
- Brown sugar
- Butter
- Turmeric
- Curry
- Cinamon
- Raisins
- Ginger
- Onion
- Chicken stock
- Vegetable oil
For the chicken:
- Chicken breast
- Black pepper
- Stock cubes
- Thyme
- Orange juice
- Lemon juice
Process to prepare the rice:
– Pour vegetable oil into a heated pot
– Add butter
– Throw in chopped onions, garlic, ginger and allow to fry
– Add a teaspoon of turmeric and curry
– Add chicken stock and water, and allow to boil
– Add rice, cinnamon stick, raisin and brown sugar, and allow to cook
For the chicken:
– Season chicken breast with black pepper, stock cubes and thyme
– Add oil and butter into a pan, enough to cover the pan
– Add seasoned chicken and sear on both sides
– Add fresh orange and lemon juice
