How to make the potatoes:
Wash the Irish potatoes properly and slice, you can leave the skin on if you like
Wrap your oven tray with foil and arrange the potatoes on it, ensure that it is properly space to avoid it lying on each other.
Sprinkle a bit of Italian seasoning, salt and paprika, you need to mix it properly to ensure the potatoes are evenly laced with seasoning.
Add a drizzle of vegetable oil and put pan into the oven and cook at 200 degrees for about 15-20 minutes. Note that the oven must have been preheated.
To prepare the chicken wings:
Season the chicken wings with salt, Italian seasoning, a bit of paprika and rosemary
You don’t need to boil it, the oil is going to cook it as well as fry it, because it has been cut into small pieces but ensure that the oil is hot before you throw the chicken wings into it
Allow the chicken wings to deep fry for 10-15 mins or until it has properly cooked
In another pan, add a little vegetable oil, put in the onions, garlic and blended scotched bonnet and stir fry for a bit
