Our usual Chef for the #WakeupNigeria show, Miyonse, on Tuesday spiced the show with ‘Plantain Sluppy Joes’. He said, ”This is like a feel good meal. Usually it burger but today we are replacing the bread with plantain.”

Homemade Sloppy Joes
Ingredients:
- 1 medium sweet yellow onion, finely diced
- 6 garlic cloves, minced
- 1 large or 2 small green peppers, finely diced
- 1-2 Tablespoons tallow, butter, ghee, or coconut oil
- 2 pounds of grass-fed ground beef
- 15 ounce can of tomato sauce (I used Trader Joe’s brand because it is organic, BPA free, and the ingredients are clean – nothing too funky in there. If you do not have access to TJ’s, I would sub in pureed tomatoes and then adjust the sea salt to your liking.)
- 6 ounce can of tomato paste (Again, used TJ’s brand. Any brand you like will do.)
- 1 Tablespoon chili powder
- 1 Tablespoon cumin
- 1/4 teaspoon ground cloves
- 1/4 teaspoon allspice
- 1 teaspoon sea salt
- 1-2 Tablespoons raw, local honey (optional)
- Romaine lettuce or cabbage leaves for serving (optional)
- Plantain
What to do:
Melt the fat in a large skillet over medium heat. Add in the veggies (onion, garlic, and green pepper). Saute for about 5 minutes until just starting to soften. Add in the ground beef and break it up with a spoon, cooking until it is no longer pink. If the meat has given off a lot of liquid, drain most of it (otherwise your sloppy joes will be a little TOO sloppy). Add the tomato sauce, tomato paste, spices, and salt to the meat mixture, stirring well to combine, fry your plantain with Olive Oil. Continue to cook for 5 minutes to allow the flavors to meld. If you desire the slightly sweet flavor of the sloppy joes from a can, you can remove the meat from the heat and stir in some honey.
